The contemporary fundamental research project is the specification of the character of Czech beer, especially Pilsner Urquell, with the aim to define this beer by means of chemical and sensory analyses and the use of technology, in order to preserve its character in changing economic and technological conditions. The second aim is to succeed in new techniques of fermentation shortening and continuous hopping to achieve greater economic savings in production.
